Pocket-sized USB charger adapter

This Instructable shows how to make a professional-looking power adapter for charging USB devices using a Pololu Adjustable Step-Up/Step-Down Voltage Regulator S7V8A.

I'm trying to assemble a similar circuit, but taking the power from a DC motor used as a generator.
In this case the current is uneven and produces high voltage "spikes" which tend to burn the circuit downstream.
Any advice how to get rid of this problem? Could a big electrolytic condenser protect efficiently the electronics?

Adding capacitors might help. You might find this application note about dealing with motor noise helpful.
